Just Because

I baked a Strawberry Shortcake today.  Just because I could.

Also because every summer I squirrel away in the freezer the required six cups of beautiful strawberries to save for a winter's day when we (make that me) need a special pick-me-up.

Besides which we really didn't indulge in many holiday sweet treats this year.  I made only one single batch of Christmas cookies.  My Scandinavian Almond Bars.  I'm not even Scandinavian (by a long shot), but those bars are sooo good.

My choice of the Strawberry Shortcake was also made because there are only six tablespoons of sugar in the whole concoction.  And the strawberries taste so fresh that it's a lovely, light treat that maybe perhaps will help pull me out of my doldrums.

I have not been a delight to be around today.  Just ask Papa Pea.  Don't worry, it's nothing serious, and I truly know I have no reason to be such a grumpy-dump.  Other than the fact that I did have a terrible night's sleep last night and have absolutely zero energy today.

So there.  That's my reason for baking a Strawberry Shortcake today.  A July treat in January.

A nice slice, anyone?

Michelle - If some of those techno-weenies out there would only perfect a method of sending goodies through the ethernet, this blogging would soar to a new level, wouldn't it? ;o)

And the problem with that logic is? Chowdown sometimes we just need to say strawberry shortcake take us away. Love it!

That looks divine! We had way too many sweet treats over Christmas, so I'm at the other end of the spectrum - trying to stay away from such things now. And hey, everyone can have a grumpy day now and then, especially if you are sleep deprived. -Jenn

Great idea! I have our own frozen organic peaches from our tree, might need to make a crisp soon!

Great idea!

I'm on the opposite cycle. I get grumpy in August!!! Yuck!!! I love winter and am happiest then (now).

I have a freezer full of strawberries just waiting for an excuse to come out and play. I think I'll have a shortcake for supper. Thanks!

That sure looks good! We just emptied all the tins of the sweet stuff, and now I have a batch of good bread rising, and a double batch of WW muffins with lots of fruit and fiber, ready to mix and pop in when the bread comes out of the oven. Your shortcake would sure cheer one up with all that red, summer strawberry goodness. So far, this winter is not being very nice, with yo-yo temps and very little snow. I need a piece of your shortcake!!!

That looks delicious. I understand the doldrums; winter adds to too much bad news. Are you getting these extra frigid wind chills?

What a great idea. Here that would be a May or early June treat--a lot of difference in our weather, for sure.

Wow, for being grumpy and tired you sure do produce a lot of love through food! Take care and may the Lord give you sweet rest.

Ok…Sign me up for a healthy slice!!! There are some days, when I get frumpy, and don’t even realize I’m frumpy, until…suddenly I’m not!!! We humans are amazing in the fact that we can absolutely change our current mood…be it strawberry short cake, or a perfectly made cup of delicious coffee! Lol! Keep on keeping on!

Oh yummy! I can't bake at the moment because we still have not bought an oven for the kitchen in our new house. While I am missing scrumptious treats like the one you have baked, I do not miss having to make the time to actually produce such a treat when I could be in my craft room doing other things!
