Lentil Burger Recipe Plus

Crikey, did I ever have one of those days yesterday.  We all have them and mine certainly wasn't anything that couldn't be overcome, especially if I had had my mental/emotional faculties in the right place.  Which I did not.  The straw that broke this camel's back was when I had taken too much time arranging a good-sized container of spring twigs and pussy willows in a vase full of water, reached up above my head to put it on a shelf . . . didn't push the vase back far enough . . . and dumped the whole thing down my front.  Yepper, some days are like that.

But now on to the business on hand today.  Here's the Lentil Burger recipe some of you requested in the comment section of my last post.

Lentil Burgers
1 cup cooked lentils
1 cup cooked rice
1 egg
1/4 teaspoon garlic salt
Good sprinkle of black pepper
1 teaspoon dried parsley
1/2 cup minced onion
2 tablespoon oil
1 tablespoon catsup
1 teaspoon Worcestershire Sauce
Dried bread crumbs 
Oil for frying

Mix the cooked lentils and rice.  Add remaining ingredients except bread crumbs and mix thoroughly.  Add only enough dry bread crumbs to make mixture easy to hand.  Shape into patties.  Coat each side with Panko or flour.  Heat oil in skillet and fry patties on both sides until browned.  Makes 4-6 burgers depending on desired size.  (The patties freeze well.)

Now for the notes I always seem to need to add to any of my recipes.

The lentils need to be cooked until mushy.    The lentils will not mix in well if they aren't cooked to a very soft consistency.  And you're not going for light, fluffy rice in this instance.  Gummy is good.  (I've always used brown rice.)

As far as the seasonings go, add whatever suits your fancy.  Go crazy; sausage seasoning would add a real zing to the flavor.  How about a little chili powder?  Or sage and thyme?  Wanna throw in some minced garlic?  Yummy.  Don't be afraid to add seasonings of your choice.

I use coconut oil (the aroma-free kind) for all my frying as it's the best for high heat.

Caramel Rolls (Adapted from a Better Homes and Garden cook book)

In a large bowl, combine 2 cups all-purpose flour (I use einkorn flour with success) and 1 package active dry yeast.

Heat 1 cup milk, 1/3 cup sugar, 1/3 cup butter, and 1 teaspoon salt to 120 degrees.

Add to flour mixture along with 2 (room temp) eggs.

Beat at low speed of mixer for 1/2 minute.  Beat 3 minutes at high speed.

Stir in as much of 2 to 2-1/2 cups more flour as you can with a wooden spoon.  

On floured surface knead in enough remaining flour to make a moderately stiff dough that is smooth and elastic (6-8 minutes).

Shape into a ball in a greased bowl.  Cover and let rise in warm place till double (about 1 hour).

Punch down and divide in half.  Cover and let rest 10 minutes.

Then roll each half out into a 12 x 8" rectangle.

Melt 1/4 cup butter.  Using a pastry brush, spread 1/2 of melted butter over each rectangle.  

Combine 3/4 cup granulated sugar and 2 teaspoons cinnamon.  Divide mixture in half and sprinkle one half over each rectangle on top of butter.

Roll up each half up jelly roll style starting at long side.  Seal seams and cut each roll into twelve pieces.

For caramel syrup, combine 3/4 cup packed brown sugar, 5 tablespoons butter and 3 tablespoons light corn syrup.  (I don't use corn syrup, but rather coconut syrup.)  Cook and stir until blended.  Divide between two 9 x 1-1/2" round cake pans.  Sprinkle 1/2 cups chopped pecans over syrup in each pan.  (Less if you prefer or you could omit the nuts if that suits your fancy.)

Place rolls cut side down in prepared pans.  Cover and let rise till nearly double, about 30 minutes.  Bake in a 375 degree oven for 20-25 minutes.  Invert onto a serving plate.  Double yum!

These rolls take approximately 3 hours, start to finish.

Oh my! I did that with paint not too long ago and ruined a brand new bra as it soaked through. I try to take a deep breath and tell myself "it could be worse" and we all know it could be much worse and then right away I think of the "worse" so I will feel better. So, it could have been acid and not water....there.....feel better now? I knew you would...it always works! LOL!
Thank you so much for the recipes! I want to get away from meat myself but finding good recipes is a problem. Your lentil burgers sound awesome especially since I can make a bunch and freeze them. I've made caramel pecan rolls a lot as my family always loved them and I did too! It's probably the same recipe. Have a great day!

The Vase Fiasco.... Mmmmmmm.... Could you be one of those, for whom the New Moon (The Dark of the Moon) might hold "interesting" happenings??????????????

Aren't we humans interesting, in ourselves? We just can't stand not having A Reason, for Everything.

Way, way, way back in time.... Forces of Nature were made into gods, who could be appeased, by sacrifices. Or so they figured. They were _trying_ to make sense of their surroundings, in any way they could come up with, then.

And yet, here we are, marvelously advanced human beings... And I am suggesting that the pull of the Moon, could have "made" you spill that vase of water, down over your "front." ,-))))) Innnnnntersting.......

But! Humans are made up of a whole lot of liquid. And the Moon is known to influence ocean tides. Sooooo, there just could be something, to the idea, that certain Moon phases, just _might_ influence we humans too.

But that thought, didn't help one bit, when you had to go change out of soaking wet clothes!!!!!!!! >,-)))

Sam I Am - Oh, you are so right! It could have been MUCH worse. (It could have been paint. On a new bra. Hee-hee.) After spitting out a a few choice expletives, I had to laugh because everything I touched yesterday was going haywire. Just one of those those days. I know why, but I'm not going to bore anyone with that six page boring explanation! ;o)

Michelle - You're welcome! Glad to post them. It was a darn heavy vase, too. Narrow on the bottom and wide on the top. I did catch it so at least it didn't break.

Lynne - Never say never! ;o} I changed clothes and hung my soaked ones to dry (and drip) in my hubby's heated workshop. No harm done . . . except for my frustration. You're very welcome for the recipes.

I bet there was some interesting language - there would have been in my house. Thank you SO much for the recipe - I am making them this weekend! I also appreciate cooking notes. This saves me time and heartache while I make all the mistakes. Yum!!

Susan - It seems to me that all recipes that have actually been tried . . . wait, aren't they all? By the number of failures I've had, I'd say, nope, not all of them! Anywho, there are always little "tricks of the trade" that aren't really spelled out so that's why I seem to always have to put a dialogue (!) with any recipe I give out Even then, I realize something might not turn out as it did for me. Example: My dear daughter and I can take the same recipe and ingredients, and turn out a slightly different product. (Obviously, she doesn't have as old and seasoned a wooden spoon as I do!) ;o}

I have been collecting veggie burger recipes for almost a decade now. Cooking your lentil mushy is just about right. I usually hit my mixture with my immersion blender before making patties.

Cockeyed Jo - What a great idea to use your immersion blender on those little lentils that don't want to cook up to a mushy consistency! Duh, I sometimes worry why I don't think of simple things like this. Thanks to you for mentioning it!

Goatldi - Hope your sister likes the Lentil Burgers . . . and you, too, if you get the itch to try them. I can't remember exactly what came out of my mouth when that (cold, no less!) water hit me. My shoes were even wet!

wisps of words - Yeah, finally! Much needed for a while. I find it hard to send daughter a picture that is meaningful for around here this time of year. Too early for apples blossoms and the scenery outside is still dull, brown and muddy. The "new" icon is from return address labels she made me for Christmas. Thought they were pretty cute and look just like her dad and me . . . with the pot over my head! Daughter is definitely the graphic designer in the family and I couldn't keep things going without her. (But I can knit a mean pair of socks.)

Lisa - Hope the recipe works for you! No damage to me or the vase except water up both sleeves, down my front and even on my shoes! Still don't know quite how I managed to not get it on the shelf adequately. It was way past time for me to get something more spring-like up as a header photo. 'Course, now I'll have to change again in a couple of weeks once Easter is over!
