A Gooood Salad!

We've been craving fresh greens so much lately that I've been buying fresh organic spinach at our local co-op. They've also had wonderful navel oranges that we've been enjoying for a month or so.

Many of you may already make this salad but I think my dressing that goes with it is especially good so I thought I'd share it.

There's no need for a recipe for the salad. It's just spinach on a plate with alternating sections of red onion and peeled and sliced oranges.

DRESSING FOR SPINACH/ORANGE/RED ONION SALAD

In a jar with a tight fitting lid combine:

1/4 cup olive oil
1/4 cup fresh orange juice
2 tablespoons wine vinegar
1 teaspoon salt
1/8 teaspoon black pepper (I use a bit more 'cause I like pepper)
1/2 teaspoon paprika

Put all ingredients in the jar and shake (the jar) until well combined. Drizzle over spinach salad on plate. Store any remaining dressing in refrigerator.

An easy-peasy salad that tastes pretty darn good this time of year!

Oh, does that sound good! I like the sounds of that dressing - I think I will try it next time I do my rendition of your salad.

Ooh boy...so nice and fresh! And the flavour combinations sound very good. I love exciting food! The baby spinach at the local market here is really inexpensive. I usually buy it to juice with a carrot every day, but this looks like a nice light meal, that would go along well with my panini days! :)

The salad does look good! I can't wait til I get some mustard planted I love that stuff,I pour hot bacon grease over it,with bacon crumbles and green onions.So good! Blessings jane

I would never have thought to put oranges and onions together, but it actually sounds very refreshing. I miss summer when I eat salads all the time - I do have them in winter too, but they just aren't as good since nothing is grown locally. I'll have to try both your salad and the dressing. Mmmmmmm....

Rain - No wonder you're doing such a good job at losing weight! Juicing too. You're so good!

Jane2 - Sounds like a wilted lettuce salad! Mmmm, good.

Erin - Doesn't it give you so much satisfaction (not to mention good taste and nutrition) to go out to the garden and pick a big salad? Love it, love it, love it!

Yvette - In the summer we eat a big salad almost every single day and it tastes so good. Not so much in the winter.
