Sharing the Recipe and Garlic Bed Discovery

For those of you who expressed an interest in the Cheesy Egg Wedges recipe about which I blogged in my last post, here it is.

The original recipe appeared in a book put out by Better Homes and Gardens and I made only a couple of small changes to it.


CHEESY EGG WEDGES

4 beaten eggs
1/3 cup milk
1/4 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon garlic powder
2 cups shredded smoked cheddar cheese
1 cup cream-style cottage cheese with chives
1 cup salsa 

Combine the eggs, milk, flour, baking powder and garlic powder.  Beat with a rotary beater until combined.  Stir in the shredded cheese and cottage cheese.

Pour into a greased 9" pie plate.  Bake, uncovered, in a 375 degree oven for 30 minutes or until golden brown and a knife inserted near the center comes out clean.

To serve, cut into 6 wedges.  Top with salsa, either warmed-up, or room temp, or cold.

As I said in my previous post(picture there), I make only half the recipe for the two of us and we eat half one morning and half the next.  To reheat, I put the last half in a small covered skillet with a wee bit of water and it comes out as good in taste and texture as freshly baked.  (That means we get two meals out of two eggs!  Can't beat that.) 

I don't know if they even sell cottage cheese with chives in it anymore, so I just add some of my snipped frozen chives.  They're for color more than anything else.

I've always used smoked cheddar cheese because of the nice flavor it imparts, but regular cheddar would be fine.

I now know which bed I planted the garlic in this past fall.  (Whew!)

Yesterday afternoon Papa Pea suggested that he could put on snowshoes, take a shovel and go out to the row of raised beds I had figured the garlic had to be in.  I was pretty sure I had narrowed it down to one of two beds next to each other.   He could tell where the ends of the beds were by the hoop trellis we left on Bed #3.  So with his shovel, he found the ends of the beds leading down to Bed #6 and #7.  By pushing the shovel head down into the snow on top of each bed, he located the wire cattle panel protecting the garlic bed.  

Ta-dah, the garlic is in Bed #7.  Mystery solved.  I bet I'll remember next fall to mark the garlic bed in my garden book in RED INK!


Here he is coming back from the expedition.  He said he was glad he didn't sink down into the snow more as it was not easy going even on snowshoes.  Good thing he's big and brave and could handle it!

Hooray for snowshoes! I stepped off a packed trail (without them) to put up new bird suets,and sunk about a meter!I did some floundering before I could get back up on solid snow! I asked Hubby how long it would be before he came looking for me! We had a recent addition of 15 to 18 inches, and re-breaking our trails was really good exercise! Getting a little 'garden antsy'!! Got the plans made and orders sent. Think of those little garlic cloves sending down roots below that lovely blanket of snowy insulation!

That recipes sounds really good. We'll have to try it. Yes they still make cottage cheese with chives in it. Papa Pea looks like such a lone soul standing there. How much snow is out there? Seems like you haven't seen the end of winter yet. We're to have high winds[50-60 ] mile an hour winds, starting later today and come in very cold this week. Single digits. For us that's cold, especially with the wind. Glad you found the right garden with your onions and chives, take care!

Leigh - It wouldn't have been a tragedy if I had had to wait until the snow melted to find the garlic bed, but now I can finalize my raised beds plan!

Rosalea Hunter - It's really amazing how hard it is to get back up out of a depression in the snow. A friend and I were x-country skiing on a packed trail once when she toppled over into the snow and went down about three feet. It was a real challenge to get her out of there. And almost kinda scary as to how hard it was!

wisps of words - It was all his idea and a darn good one! We often say that between the two of us, we still have one good working brain.

Our mailbox isn't as buried as some, I see! Our snow has reached only the bottom of the boxes, so far!

Lynne - Your weather forecast sounds just like ours. Winds gusting up to 50 mph. Gads! I don't know our exact snow measurement out there, but in the summer when I stand on the ground I can just barely reach up and touch the top of that hoop trellis.

We don't see the cottage cheese with chives offered way up here, but maybe in the big city. The last time I remember seeing it was a long time ago, after we were first married!

MamaPea, Do you think ricotta cheese would be a substitute for the cottage cheese? I have subbed this in lasagna with good results. I will not eat cottage cheese. It's a texture thing for me and bad memories from my childhood, don't ask. Otherwise this sounds like a recipe I will be trying.

Lisa B. - Gotta admit I've not used ricotta cheese a lot so am not as familiar with how it reacts in a recipe as I should be. But I wouldn't be afraid to give it a try in this recipe. What would it do? Make the texture a smidge bit more "firm?" That wouldn't be so bad.

Thank you so much for the recipe! I was going to try and Google it as I was late reading your post but voila! There it is! I struggle with breakfast items as I don't care for cereal much and I'm always looking for good ideas for breakfast. I'm looking into making non-dairy yogurt as the doc doesn't want me eating too much dairy....cheese isn't dairy is it? LOL! I love cheese and ice cream and all dairy except milk. Everything in moderation as the Greeks say.
