Mostly to Make Myself Feel Better


Proof that I DID accomplish something today . . . some of the stuffed green peppers I made chillin' out in the freezer until firm enough to package.

Ever have one of those days when you keep moving all day but it seems you don't have much to show for it?  'Course you have.  We all have.

I made a double batch of stuffed green peppers which will be tasty (I can hope), quick, easy dinners this winter.  But by the time you cut and clean the peppers, blanch them, cook the rice, brown the ground beef with the cut up onions and garlic, and gather all the seasonings to throw in, then do the actual stuffing of the peppers . . . that all takes a chunk of time.

So, okay.  I can feel like I had a productive day.  And I will, just as soon as I get my ironing done.  (Geesh, I'm such a slave driver!)

Nice dinners in waiting. I love to have dinners like that, good healthy food that I can pull out and make in a few minutes when I'm braindead at the end of a long day and not up to cooking. Those look beautiful, and there's a lot of work involved. Well done! Now you can rest on your laurels and pat yourself on the back.

Oh, I LOVE stuffed green peppers. Alas, our pepper garden produced nothing more than a few teeny tiny peppers, barely enough to stuff with a small meatball.

And, did you say "iron"? I can't tell you the last time I had an iron out.

Trailshome - Ha! "Braindead at the end of a long day . . . " Duh, I can relate to that. :o} Stuffed Peppers are about the only reason I grow sweet peppers. I freeze some in chunks to use in chili and such through the winter, but I do love to have the stuffed ones ready to pull out for a dinner.

Yup Mama Pea is preparded for the winter that's for sure. Iron, did I hear that word Iron? I don't wear things that need ironing, I just wear them long enough before I go anywhere the wrinkles fall out, LOL

Carolyn - What happened? You should have the warm weather to make those peppers grow BIG! I wouldn't be getting the ones I am (finally!) off my plants if I didn't have a cold frame over them for help.

I envy people like you who can make your clothes look good withOUT ironing. If I didn't iron, I'd look like I slept in my clothes. For about a week.

Tombstone Livestock - If I keep coaxing produce out of the garden, you really may be spared the expense of sending me rice and beans to survive on!! I really do admire you gals that can get by without ironing. So wrinkles will fall out just by wearing? How long??

Your stuffed peppers look yummy! I made some with mushrooms, tomatoes and swiss cheese, my middle daughter said it looked like a bowl of hate! Ha! She hated everything in them except the cheese LOL!

Ironing, yuck!!!! I only iron when I HAVE to, which is usually never thank goodness!

Being self-sufficient is a LOT of work! But, oh, the rewards! I'll be right over... :) I end up having to iron every week because all my clothing is either cotton, linen or wool. I usually get a real rootin-tootin dvd from Netflix and iron away!

Kristina - Yep, it's that old guilt trip that has been laid upon us . . . gotta get some "work" done. But playing hookie (i.e., doing something that feeds your soul) is very, very important, too. (I need to get that tattooed on my forehead, I think.)

Kelly - A bowl of hate!! That's pretty strong . . . but understandable coming from a darn kid! ;o}

I must be weird 'cause I actually LIKE ironing. Always have. (Wanna send me yours?)

Susan - I always watch something on the little screen when I'm ironing, too. Or listen to an audio tape. Otherwise, it would (admittedly) be a little boring.

We love stuffed peppers here. How far away do you live???:) I have no ability to grow peppers, but I do have friends who have that ability and was blessed with many peppers this fall.

I'm with Tombstone Livestock, we wear the clothes long enough for the wrinkles to come out. If there's not enough time before going public, find something else to wear. lol

We call that 'fast food' around here!!! Love to already have prepared meals in the freezer.
PS I used to use ground meat too in our stuffed peppers, but now substitute grated carrots, zucchini, etc. and found we don't miss the meat.

Lisa - I would prepare a LOT less meat dishes than I do, but hubby has hit a point where he really craves the meat protein. (This is the same man who urged me to cook vegetarian for a 15 year period!)

Oh ha! When I first glanced at the picture I thought they were muffins. We have a bunch of peppers too so I think we'll do the same with them and freeze them. Great idea!

Sparkless - Having a bunch of muffins in the freezer wouldn't be such a bad idea either! I love these stuffed peppers as an easy meal . . . I take them out around noon time to defrost on the counter, then sprinkle grated mozzarella cheese on top, and bake in a 350° oven for 30 minutes. Easy dinner!
