Nah, I'm not really gonna show pictures of me eating a whole pie . . . but if it were this pie, I know I could do it.
It's refreshingly light and yummy and sooo good. If any of you still have access to fresh blueberries from your garden, or wild ones you can pick, or (what the heck) buy in the store, you should give Freshy's Blueberry Pie a try.
I got the recipe from a gal I worked with about (oh, dear!) forty-some years ago. (Ya know, I don't have a problem with my chronological age - I suppose 'cause I don't feel any different than I did in my thirties - but when I mention something that happened thirty-five or forty years ago, and I was already an adult at the time . . . well, that just cannot be. But it is . . . gulp. Sigh.)
Back to the pie.
I asked my co-worker who "Freshy" was. She replied that she had no idea; it was just the name of the recipe when she got it. So there you go.
Let's get to it.
Start with a baked and cooled pie shell.
In a saucepan, combine 3/4 cup sugar, 2-1/2 tablespoons cornstarch and 1/4 teaspoon salt.
Blend in 2/3 cup water and 1 cup fresh blueberries.
Bring to a boil and cook, stirring constantly until very thick.
Remove from heat and stir in 2 tablespoons butter and 1-1/2 tablespoons lemon juice. Put mixture (still in saucepan) in refrigerator for about 20 minutes to cool.
Then add 2 cups fresh blueberries, mix gently to blend well and back into the refrig it goes for about one hour.
Beat one cup whipping cream until it starts to thicken. Add 2 tablespoons powdered sugar and 1/2 teaspoon vanilla. Continue whipping cream until very stiff.
Spread one-half of whipped cream over bottom of pie shell. Top with berry filling from refrigerator.
Garnish around the edge with the remaining whipped cream and put back in refrig to chill for one to two hours before cutting and serving.
What a small, little slice.
It will disappear in a few seconds flat.
But what's to stop me from having another small slice?

That pie looks wonderful. I don't think I'd make it to the pie stage though.....I'm a blueberry junkie. One or four handfuls is never enough!!
Thanks, Sue! Good thing you and my husband don't go blueberry picking together . . . you'd bring back empty buckets.
When I get the blueberries cooked and thickened for this pie, that's when I could sit down and eat the whole saucepan full! Mmm-mmm.
Okay, you MUST have made this during my childhood, but I don't remember it! Sounds WONDERFUL! I might even make it today!

Chicken Mama - I didn't make it a LOT when you were growing up 'cause your dad so preferred a regular, plain blueberry pie but now (in his dotage) it seems this one tastes pretty good to him. And since I've always LOVED it, I've been making it quite a bit in the past few years.
Woohoo!!! 'At's what I'm talkin' about! That would go, I think, really well with my homemade chocolate custard ice cream. Man, I'm going to be craving blueberry pie from now, until Thanksgiving.
Yum! Glad I picked enough to have several gallon bags of berries in the freezer! I am also jealous of you being able to fire up the woodstove, it is so hot and muggy here I can barely see across the yard. My favorite time of the year back home is fall...keep those woodstove pics a'comin, lol!

Hi, Erin - I would absolutely melt in your part of the country, I'm afraid. I lost all my tolerance for heat and humidity shortly after we left Illinois.
Today is our second day of rain. High today of 59° but it feels much cooler, of course, because of the dampness. I've had the wood stove perking along all day . . . sorry, don't mean to rub it in!
I have been here in VA for over 15 years and I still have no tolerance for this weather!!!

I'm just looking for an excuse to make my chocolate ice cream. Though, I have no idea as to what might go with blue berry pie? That is, except turkey, mashed potatoes, yams, cranberries, stuffing, squash...finished off with a big slice of blue berry pie.

Hi, Thomas - First off, thanks for commenting and congratulations on your move to your half acreage! The start of your gardens looks beautiful. I'll be keeping track to see how your winter gardening comes along. We've poured over Coleman's books, too, and he makes it look do-able.
Yup, that slice of pie in the photo was the first one out. The pie really sets up quite nicely so it wasn't hard to get the first piece out intact.
