Good Enough To Eat

I made a pie last Friday that I haven't made in ever so long. And the way everyone oohed and aahed and smacked their lips while eating it, I'm wondering why I haven't made it in ever so long!

If you've got any chocolate lovers around, here's the recipe should you care to give it a try.

CHOCOLATE VELVET PIE

Cream 1/2 cup softened butter and 1 cup sugar. Blend in 1 oz. unsweetened chocolate (melted and cooled if you don't use the pre-melted packets) and 1 teaspoon vanilla.

Next add three eggs, one at a time beating well after the first two and then after adding the last one, beat at high mixer speed for 5 minutes. (This is important to get the volume you want in the finished filling.)

Using a spatula, pour/scrape mixture into a baked and cooled pie shell. Smooth the filling out to the edges of the shell.

Top with a sprinkling of grated chocolate.

(At this point, the pie can be frozen for an easy-peasy dessert at a later time. It freezes beautifully. You can either defrost it slowly in the refrig, a little more quickly on the counter or even slice and eat it frozen if that turns your crank. On a hot summer day, that ain't bad.)

If you plan on serving your pie the same day, it needs to be refrigerated for a couple of hours to set up.

It can be served without the dollop of whipped cream but . . . why???

Store any leftover pie in the refrigerator.

I know this pie is made with uncooked eggs and if that concerns you, you may want to skip it. Because we have our own home-raised eggs, this doesn't bother me a bit. We know our hens are healthy, we know what they are fed and how fresh the eggs are. I would not use store bought eggs or ones from hens I didn't know intimately. Obviously, feel free to make your own decision on this.

Now we're talking! That's always been one pie I will eat! I personally eat it frozen :) I have to ask... "pre-melted packets?"... you have something in your stores there I've never seen here!

Ohhh, this sounds yummy! I, too, wouldn't use store bought eggs for this. This sounds like a good one for one of the easy store bought graham cracker crust pie shells. I think I'll save this in my recipe folder. Thanks!

Erin - No pre-melted chocolate? I'll send you an e-mail with a picture of the box. They sure are handy rather than melting the little squares.

Sparkless - As Jane keeps telling me, ya can't deprive yourself of everything all the time! Go for it.

Since I have my own chickens too, I'm going to try this. It looks good enough to eat - - all by myself ... LOL. If I ate that much chocolate pie, I would be sooo sick!

Going shopping tomorrow - will pick up ingredients.

I'm with Erin-I've never seen the packets of melted chocolate. That would save a step (and another dish!).
And who the heck doesn't like chocolate? That's inhuman!

I see why you dont make this pie very often. Reading the ingredients, that is one high 'energy' pie. But I bet so worth it. Was that your Birthday pie?

Yvette - Don't forget it freezes very well. You don't have to force yourself to eat it all at once! ;o}

Sue - This pre-melted chocolate has been around for years. Look for it by all the other baking chocolates. It's Nestle brand.

Jane - Nope. Dear daughter made me my favorite Banana Cream Pie for my birthday. This was made for company Friday night. To say we got a little over-pie-d this weekend is an understatement!

Jen - File away for later. It's an easy one to make.

Susan - The bad thing about this pie is that it tastes so light and smooth going down that you have no idea you're consuming 900 calories per piece!
