Peanut Butter Cookies

I've had a request from a reader for the recipe for my Peanut Butter Cookies and since they are cookies that are appetizing at this time of year, this seemed like a good time to post it for her and anybody else who might be interested. (Autumn? Back to school lunches? Peanut butter sandwiches? Peanut Butter Cookies? Really, don't you think Peanut Butter Cookies are more appropriate in the fall rather than, say, in the spring? No? Huh.)

I combined recipes from two different friends (both good cookie bakers), and this is the recipe I've been using for over ten years now.

PEANUT BUTTER COOKIES

1 cup butter, softened
1-1/2 cups peanut butter (I like smooth)
1 cup white sugar
1 cup brown sugar
1-1/2 teaspoons vanilla
2 eggs
2-1/2 cups flour
1-1/2 teaspoons baking soda
3/4 teaspoon salt

Cream butter, peanut butter, sugars and vanilla. Then mix in eggs.

Add flour, baking soda and salt and mix until thoroughly blended.

Form into balls (any size your heart desires . . . within reason) by rolling an amount of dough in your hands. Place on ungreased cookie sheet and flatten with a fork that has been dipped in granulated sugar.

Bake at 375 degrees for 6-8 minutes depending on size of cookie and whether you like them soft or crispy. (Soft is the only way in our house.)

Cool on racks and store in air tight container.

Oh-so-good dunked in cold milk!
