In case you get a hankering to give it a try, here's the recipe:
BANANA-BLUEBERRY PUFF
1 tablespoon butter
1/3 cup flour
1 tablespoon sugar
1/4 teaspoon salt
3 beaten eggs
1/2 cup milk
1-1/2 cups fresh or frozen blueberries
1 sliced large-ish banana
1/4 teaspoon cinnamon
1 rounded tablespoon sugar
Preheat oven to 400 degrees.

The original recipe said it would serve four but the two of us often finish it with no problem. Needless to say if you're using frozen blueberries (as I did), let them defrost first. Ones that have been frozen aren't as nice as fresh, but still quite tasty.
As you can see by the above picture, I didn't get a lot of poof to my puff this morning. Sometimes it gets grotesquely high and the next time it will be rather demure like today. It must be dependent on atmospheric pressure, or the phase of the moon, or whether I'm dressed or still in my jammies.
I keep thinking I should try using other fruit . . . strawberries and blueberries? Strawberries and bananas? Fresh peach slices and blueberries? Mmmmm, raspberries! But I like the banana and blueberry combo so much I have yet to venture away from that.
At any rate, it makes a nice, different breakfast with which to start a lovely Sunday.
Sounds a lot like Pancake Fluff - but with the addition of fruit on top! Might have to try that! (Although dunno if I'd go the bananas & blueberry route. Maybe peaches w/ cinnamon!)
ReplyDeleteI made Pancake Fluff last week in the old combifire cookstove and forgot about the broiler element which hangs down from the top of that oven's "roof". Needless to say, the Fluff fluffed right up to and around the heating element. Whadda disaster!
Chicken Mama - Yeah, I guess the 'batter' does resemble Pancake Fluff, especially the way it (usually) puffs up. But the fruit addition gives it a very different flavor, I think. Your idea of peaches with cinnamon sounds WONDERFUL!
ReplyDeleteIn the Northwest, where I grew up, these are known as "Dutch Babies" (not sure why.) I've also heard them called oven pancakes, but that's so...boring. Regardless of the name, though, I LOVE 'EM! We usually use a simple batter of equal parts milk, eggs, and flour with a pinch of salt and a bit of unrefined sugar or maple syrup added in. We've baked apple slices in with ginger and cinnamon. Usually we just bake it plain, having poured the batter into 2 tbsp melted butter in a pre-heated skillet. When it's done, we sprinkle it with lemon juice and powdered sugar. YUM!
ReplyDeleteHi, MaineCelt - Yes, your recipe (sans fruit) sounds like what Chicken Mama was referring to as Pancake Fluff that I've made for years. Lemon juice and powdered sugar is good but so is a drizzle of maple syrup. Oh, stop! I had only a small bowl of Bean Soup for dinner tonight and I'm fighting attacking the container of popcorn I know is in the freezer. Can we talk about something other than yummy food?

ReplyDeleteHi, Melissa - Thanks for stopping by! I have to share something about the piece Roy insisted I save for him to eat later. Within a couple of hours the blueberry 'juice' had stained the puff mixture a horrendous green color! 'Course, he ate it anyway . . . said it tasted fine.
