Lunch Today and Other Drivel

Boy, am I ever tired of these seemingly endless gray days!  I know I shouldn't complain because at least the temperature has gone up into the 20s, but with about 97.5% humidity out there, dark gray clouds and a stiff breeze . . . it's just not stimulating me to great feats requiring any kind of energy.

It was a smidge before 6 this morning when hubby and I woke up.  We both had spent a night tossing and turning while battling through wild and weird dreams.  Hmmm, something in the air?  What did we have to eat or drink too late last night?

Papa Pea chose to get up and on with the day, but I opted to try to get more shut-eye.  Didn't work though so I was soon up and dressed also.

Mid-morning we bundled up and walked out to get the mail.   Where we were protected by the trees, it was almost pleasant (if dark, damp, and gray can be pleasant), but at the few spots where the wind whistled down the drive it was not nice.  Keeping watch for the many icy patches under foot was required.  We're still shaking our heads over the lack of snow this winter.  In our location I think we've had only about 6" total so far.

I've had a hankering for tomato soup so whipped up a double batch (half for the freezer) of my homemade Cream of Tomato for lunch.  I got a little crazy and made a batch of popcorn to put in our soup.


Soup and popcorn (I was surprised the popcorn seemed to "melt" and nearly disappear as soon as it was put in the soup -- no wonder we can eat a bowlful of popcorn and not feel stuffed) along with a couple slices of horseradish-dill cheese and dill pickles Papa Pea fermented back in early September.  They're still tasty now these five months later.

Now I'm back to the kitchen to bake some Black Bottom Cupcakes.  Hubby and a friend are going for a day's hike tomorrow, and I figured some chocolate to take along would be appreciated.

It is yucky in ga too! Very cold/ windy/ cloudy. How do you make your soup? It sounds perfect for today!

We have our first sun in a month--and it's making me antsy to get outside and DO something, but what????
We've already had a long walk today.
Can't garden.
Snow is too thin and mushy to ski.
At least when it's gloomy, I FEEL like hunkering in, reading/painting/cooking....but this is just making me restless.
Hope all else is going well for you this winter. I'm having a very nice rest/relaxation time. Won't be long until it's GARDEN TIME!!!

Your soup looks tasty and the cheese sounds wonderful! The cupcakes sound so good - we are trying to cut back on sweets here and are ready to kill each other sometimes!

Popcorn in your soup....that's a first for me, but now those cakes could make my day!

I love tomato soup! Maybe for lunch tomorrow, we have 16 inches of snow on and the temp tonight suppose to be 0.

I have done the popcorn in the tomato soup before. A friend of mine had it one time when I was visiting.

Oh I want a bowl of tomato soup now - and I want some of those apple dishes - since I live in Washington and Apples-R-Us. I have the Desert Rose from my granny and adore them too - but I do like a good apple dish. Can you give us your recipe for the tomato soup, please

Angela - I will do a short post later today with the Cream of Tomato soup recipe in it. I have leftovers in the refridge for today . . . yum!

Sue - This winter really has been the pits weather-wise, hasn't it? We keep talking about going skiing but so little snow!

Yes, m'dear, garden time is coming up fast. At least we'll be able to spend more time out in the sunny (?), fresh air then. Until then, relax, rest, paint, cook, read. Ah, it's the life!

2 Tramps - The cheese really, really has a horseradish bite to it, but we like it. Makes a wonderful grilled cheese sandwich!

Isn't it amazing how cranky we can get when we suffer from that old bugaboo sugar withdrawal? Hang in there. You know it's a good thing you're doing!

Laurie - It was really quite tasty! Don't think I'd like it in a "thick" soup, but for the tomato soup it was great.

Sue - Good soup weather, for sure! If you want, you can send some of that 16" of snow to us. We are still sadly lacking in the white stuff this winter. :o(

I have always wanted to can tomato soup, but it states to use within a few months. I wonder if you'd share your recipe, because freezing is so much easier. Those pickles look good too, and Hubby asked me to plant some this coming summer.

Those grey days can really get you down after a while. We had a sunny day yesterday, the first in a long time and it changed everybody's mood. I've never heard of popcorn in tomato soup before. It was always just saltine cracker when I grew up. Maybe I'll give it a try. -Jenn

I love tomato soup but have never made it from scratch. Now that the canned stuff doesn't seem to cook properly and always curdles I may just have to learn how to make it myself. And popcorn in soup sounds like an epic idea!

Jenn - I love crackers in a soup like tomato but my husband has an aversion to all crackers. (Must have had something traumatic happen in his childhood concerning a cracker is all I can figure out!) So I decided to try the popcorn. It was great!

Your soup looks amazing, what type of tomatoes did you use in your soup? I've never put popcorn in soup, interesting! You're so sweet, making cupcakes for your husband.

Sandy - Because we can't raise enough tomatoes to can up here in the frozen tundra(!), I've been using organic canned stewed tomatoes, Muir Glen brand. Someday when we get up a large hoop house or some grow houses, I hope to be able to grow (and ripen!) enough tomatoes to have for canning my own again.
