Let's Eat!

I made Rice Pudding again a couple of mornings ago.  I'm so happy with this recipe I just had to share in case any of you were interested.

I've searched for a rice pudding recipe made with leftover cooked rice (instead of raw rice that cooks in the pudding) for years.  (Yeeeaars, I tell you, years!)  

When I make rice for one meal or another, I almost always have a cup or two leftover.  Remembering a time or two many long years ago when I ate rice pudding and loved it, I've been looking for a good (as opposed to bad) recipe to use.

Here's what I've ended up with and think is purdy darn good.

Rice Pudding
3 beaten eggs
2 cups milk
1/3 cup sugar (or honey)
1-1/2 teaspoons vanilla
1/2 teaspoon salt
2 cups (or even a bit more) cooked brown rice
1/2 cup raisins
1/2 teaspoon cinnamon

Mix together first five ingredients.
Add rice, raisins and cinnamon.

Pour into flat (rather than deep)
baking dish and bake at 
350 degrees for one hour.


Good warm or cold.  
We eat ours in a bowl
with additional milk.
Enjoy!

Susan - Oops, sorry, all gone! And so is the pan (at the moment). It's a speckled enamel, and I love it! I made a (another!) batch of Rice Pudding in it and sent it to H's with Chicken Mama for the twins. They adore it and snarf it up like they haven't eaten in weeks.

Kristina - Made with fresh eggs and milk and it can't be beat! I know you're short on eggs right now so you might want to try it when warmer weather hits and your chickens are laying better.

Oh my gosh, that looks soo good. I always have a cupt or more of leftover rice which I can now put to good use!

Oh YUM! I can even remember the last time I had rice pudding. I guess this means I'll have to try this recipe cause now I'm craving it.

Love rice pudding, looks so good. Good idea to double recipe of rice just to have some left for pudding, cook once, eat twice.

Well I would invite myself over - but it is just too cold where you live - so guess I'll have to make it myself (and I even have some leftover rice).

thank you...brown rice too! I love love rice pudding but I too have a hard time finding a good recipe for it. Will try this one sounds yummy!

Mama Pea,

This sounds like a recipe worth keeping. We've never used brown rice in rice pudding. I usually take the left over rice (usually 1 cup), pour a little milk in it, cinnamon, sugar, and vanilla.....no baking and serve. It disappears in this house, lol.

Now you've peaked my interest, and I'm going to have to make some true homemade rice pudding :-)

Sparkless - I didn't grow up with rice pudding, but have had some I liked so that's why I tried and tried to find a good recipe. I think you'll like it.

P.S. It IS really cold here this morning. Got a nice snowfall yesterday but cold and wind this morning. Brrrr!

M.E. Masterson - I only cook with brown rice. Well, I do have some white basmati, but don't use it too often. Brown rice works perfectly in this recipe. Hope it works for you!

Sandy - Nothing wrong with your "speedy" rice pudding! I've done that, too. I think you'll like this baked version.

Leigh - It's a great breakfast dish for us. Not nearly as much "fussing" as bacon and eggs, etc. I'm sure it would work for you . . . plus it smells wonderful while baking. Walking in after chores will be delightful!

Nancy po - Yes, quinoa would be good. How about millet? Yep, gotta try that! Thanks for the idea.

2 Tramps - Oh, ya are, huh? ;o] Especially in the winter time, we like to eat breakfast for dinner. But I don't really think Rice Pudding is strictly for breakfast. I know people who say it's a dessert! So you just go ahead and eat it any time you want!!
