I'm Gonna Eat a Whole Apple Pie Tomorrow!

For Christmas, my daughter gave me four small Pyrex dishes.

They could be used for individual casseroles or . . . as miniature pie plates!

They're only 6" across.

This afternoon when I started to make a Dutch Apple Pie, I thought of the dishes and decided to make four little pies instead of one regular sized one.

I cut a ball of dough for one pie crust into four equal pieces and rolled each piece out.  They fit perfectly in the Pyrex plates.  Then I prepared the same amount of apples I would for a regular pie but divided them up into the four little pie plates.

Made the crumb topping and into the oven they went.

When Papa Pea came into the kitchen a few minutes ago and saw them cooling on the counter, he said, "Perfect.  One for you, one for our daughter, and two for me."

Ha, in his dreams!

LOL!

I just love Pyrex. At a garage sale last Friday, I found a set of those old nesting bowls in primary colors, just like the ones my mother bought in the 50's. The set was only $30 and I snapped that right up, because I've seen the big yellow bowl priced at that, other places.

When I was your age, I used to make pie for Hubs' lunchbox, and I'd use those little individual-sized metal pie tins. A little more trouble to make but they packed up so much better. Our kids loved those little pies and would go to school and tell their teacher they ate a whole pie.

I am always on the lookout for Pyrex - I've never seen those adorable little pie plates! I believe the rule is that the cook gets two and everyone else stands in line....

Ilene Jones - Oh, envy for those colored Pyrex nesting bowls you found! I had a set at one time, but butter fingers that I am, the last of them went a couple of years ago.

I have a set of those little metal pie tins. They're even smaller than these Pyrex ones, but so much fun to use!

Leigh - Hubby and I tore into one this morning as dessert after brunch (is that legal) and only consumed half of one. (Guess our brunch was too big!) But it was tasty . . . and fun!

Tami - Oh, yes! Macaroni and Cheese! I'll have to do that soon. In those individual dishes, it would even go over as a company meal, I'll bet. ('Course, our "company" is casual!)

Sandy - There are still three of them untouched. Come on over!

Susan - I have a full-sized pie plate just like these miniatures. It was my mom's that I took when we closed up her household. I don't know how old it is but I'll be really disappointed if I ever break it.

P.S. I like your rule.

Oooooo, I love those! What a sweet daughter you have! That is a terrific idea and makes an apple pie even more special and delicious when each can have their own - notwithstanding Papa Pea's request! Enjoy!

Lisa - Believe it or not, we still have two of the pies (intact!) on the counter. Hubby and I polished off one today and daughter came by and sat at the table and ate all of hers. They were good, too, I'm glad to say since they were made with our own apples which didn't mature quite enough this year and have not been the most flavorful eating apples. Guess I'll have to make all the rest of them into pies!

I have lots of pyrex and you can do so much with it! Cute pies!!!

Nancy - I'm just hoping they still make "good" Pyrex . . . like it used to be years ago. It's still kinda pricey, but I don't mind paying for something I know I'll have and use for many years.

Everyone who saw the little pies got a bang out of them. Thanks!

I LOVE those little pie plates, do you know where she found them? I have a big pie plate like them too AND a set of the nesting Pyrex bowls in the primary colors. :)

Hi, Candy - She got them at a store in our town, not a big chain store although, who knows? You might be able to find them at a Target or WalMart. I'm pretty sure I've seen the regular sized pie plates like them there in the housewares section.

They were $4.99 each and if you're interested, we could probably work something out to ship them to you. 'Course, postage is so darned expensive these days it might not be worth it to you.

Be careful with those bowls. They're gems!

I have some of those pyrex dishes but I never though of using them for little pies. Yours look delicious. Great idea. Thanks. xo, Rosemary

Rosemary - What have you used yours for? Someone suggested Mac & Cheese and now I can't get that out of my head . . . it sounds so good. Next time I use them for pies, I'll make ones with a regular top crust. I think they'll look even more like miniature pies that way.
