A Resurrected Christmas Cookie

This year when I was doing my Christmas baking, I made a cookie that I hadn't made for years.  The first time I made Coco-Mint Cookies was probably in the 1980s (or earlier?) some time.  They appeared in our house at holiday time regularly for a few years and then mysteriously disappeared for some reason.  I think I remember our daughter making them once several years ago because she's particularly fond of them.

They're kind of like a healthy Oreo cookie with peppermint flavoring in the creme filling.  Everyone likes chocolate (the cookie part is chocolate) and the red and green tinted filling gives them a festive appearance.  From the comments I got on them this year, I think I'm gonna have to make them every Christmas from now on.


COCO-MINT COOKIES

3/4 cup butter, softened
1 cup sugar
1 egg
1/2 teaspoon vanilla
2 cups flour
3/4 cup cocoa
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup milk

Cream butter and sugar.  Add egg and vanilla and beat well.  Add flour, cocoa, baking powder, baking soda and salt.  Mix and add the milk combining thoroughly.  Refrigerate the dough for easier handling, if you wish.  (I didn't and had very little trouble working with it.)

Using a floured rolling pin and work surface, roll the dough to 1/8" thickness.  Use a round cookie or biscuit cutter to cut out round cookies.  (My cutter was 1-1/2" in diameter and that seemed to be a good size.)

Place cookies on an ungreased cookie sheet and bake at 325 degrees for 10 minutes.  Immediately remove to a cooling rack.

When the cookies are cooled, spread Mint Filling and assemble them sandwich-style.

Mint Filling

3 cups sifted powdered sugar
6 tablespoons softened butter
2 tablespoons milk
Green food coloring
Red food coloring
Oil of Peppermint

Divide creme filling in half and add 4-6 drops of green food coloring and 2-4 drops of oil of peppermint to one half and 4-6 drops of red food coloring and 2-4 drops of oil of peppermint to the other half.


My cookies were getting snitched so fast that I didn't get time to count them, but I think I got somewhere around 40 sandwiched cookies.

I'm thinking of making them again at Easter time with pastel colored creme filling.  I just had a thought . . . wouldn't it be cute to make the cookies with a bunny shaped cookie cutter?

Those cookies look like they would be delicious no matter what shape they are made in! I swear - I can smell the chocolate and mint right now!!! I am supposed to bake a cake for Tramp 1 to take to work - I think I will make your cookies instead!

Carolyn - I really think I'm gonna do these for Easter. Maybe even put lemon flavoring in the filling rather than mint? I have a bunny face cookie cutter . . . you know, puffy cheeks and ears sticking up . . . that I think I'll use. Except that will make a honkin' big cookie. Think anybody will complain?

Ohh mint and chocolate, you can't go wrong there. They look YUM! I'm keeping this recipe to make the next cookie making day. I've got some left over candy canes I can crush up and add to the filling too.

2 Tramps - Oh, please take a picture to show us all if you do go with the cookies instead of a cake. Cookies would be so much easier to pass around and eat instead of cake anyway.

Sparkless - Ingenious idea for the filling! The crushed candy canes would make them extra special. Give me a half glass of cold milk and I'd dunk 'em!

They look pretty enough for Easter .I here debating where can I move to?Also all the new info from Jerry's oncologist on Monday and her new strategies .I am thankful for the slowness of his cancer But don't look forward to the end.Actually ,I can't even look at it realistically yet.Is that common?

Those look fantastic but you lost me at rolling them out. I have never had much luck with rolling / cutting cookie dough :(

The Weekend Homesteader - Yes, we just aren't getting any nutrition from so much commercially prepared foods any more. There is so much junk, as you rightly say, in there that the human body has to work hard to expel from our systems. It's like asking our bodies to ingest and then get rid of poison without it having an ill effect.

Lisa - Oreos used to be my favorite cookie, but I haven't had any for years and years. The last time I did taste them, they really didn't have a "good" flavor like I remembered. These Coco-Mint Cookies don't taste like Oreos used to . . . but they are a very yummy treat!
